Creates a new category.

Fields

metafields [MetafieldInput!]: The metafield values to assign to the category during creation.
name String!: The name of the category.
parentId ID: The id of the parent category. If not provided, the category will be created at the root level.
slug String: The slug of the category. If not provided, it will be generated from the name.
